a ‘nebraska jack’ breakfast casserole

Jack cooks breakfast every Sunday morning for his friends.  8:00 AM.  Don’t be late.  

When Banjo Man and I are in Nebraska, we are always thrilled to be invited to join the guys for the weekly feast.

Here’s one of my favorites, from the Pioneer Seed Breakfast, in Waverly, Nebraska.

Nebraska Jack’s Egg Breakfast Bake

Butter a 13 x 9 x 2 inch pan.  Preheat oven to 325.

18 eggs, beaten
1 cup milk
1 cup sour cream
1 tsp. salt
1/4 tsp pepper
1/2 tsp. dry mustard
1 1/2 tsp. onion powder
1 cup shredded cheddar cheese
1 cup shredded swiss cheese

Mix all of the above ingredients together and pour into pan.  Sprinkle with browned bacon or cooked sausage.  Cover with foil so top doesn’t brown.  Bake 45 min. or until knife inserted comes out clean.
