another crock pot experiment

Okay, now you all know I never have been and never will be a professional food photographer.

And yes, this looks less than appetizing.

As I used to tell my hungry children (all six of them, gathered ’round the dining table like The Waltons), this is a “Looks Bad Tastes Good” dinner.

My youngest three (adopted into our family at ages 6, 8 and 10) had “food issues”. One stole bread by piling it into her lap under the table.  Another, a victim of “institution” food, had to put ketchup on everything on her plate.  There was also massive cereal hoarding. After our very first family dinner, Banjo Man and I were so rattled we ended up drinking wine in the car (in the driveway).  We told ourselves it would get better.  And it did.

(I was a stickler for good manners.  Somewhat of a nag.  They survived.)

And the “Looks Bad Tastes Good” dinners were usually a big hit.  I’ll have to do a special blog post with those recipes one of these days.  Other popular nights were “Make Your Own Sandwich” (deli meat was such a luxury!) and “Breakfast For Supper”.

“Pretend Vegetables” were also a thrill.  When I was really, really busy with writing deadlines I’d sometimes plant a casserole on the table and ask my darling children what vegetable they wanted to pretend was being served (they really liked Pretend Carrots).

Please don’t judge me.  I was cooking for seven every night and Banjo Man was rarely home for dinner on weeknights.

Anyway, back to the crock pot

Split Pea Sweet Potato and Kale Stew

Now that I’m looking at this picture again, the stew looks more like lentils than yellow split peas, but it’s hard to tell.  But you get the general idea, right?

So here is Fat Free Vegan‘s recipe for Split Peas with Sweet Potatoes and Kale.    I left out the kale and it tasted just fine without it.   If you like kale you can buy it frozen and dump some into the crock pot, too.

I’m now in love with sweet potatoes with my legumes.  (Thank you, Fat Free Vegan!  I love your recipes.)

raspberry quesadillas????

I found this recipe on a blog called “Mennonite Girls Can Cook“. For those of you picking raspberries and expecting visits from small children, this might be worth trying.

“Summer meals are often cooked on the BBQ…and here’s a dessert to throw on the grill while it’s still warm.  A filling of fresh raspberries, cream cheese and chocolate morsels sandwiched between two flour tortillas makes for a great grilled dessert.

  • 1/2 cup cream cheese, softened
  • 1/3 cup icing sugar
  • 1/2 teaspoon vanilla extract
  • 2 large flour tortillas
  • 1/4 cup milk chocolate morsels (optional)
  • 1 cup fresh raspberries
  1. Put the cream cheese, icing sugar, and vanilla in a mixing bowl and beat until smooth.
  2. Place a tortilla on a cutting board.
  3. Spread half of the filling on the tortilla.
  4. Place raspberries evenly over cream cheese.
  5. Sprinkle chocolate chips over the filling.
  6. Spread remaining cream cheese mixture on other tortilla, and place (cream cheese down) on top of first tortilla to create a sandwich.
  7. Press down on tortilla sandwich gently.
  8. Slide the quesadilla off the cutting board and onto the grill.
  9. Close the lid.
  10. Cook for about 3 minutes…then give the quesadilla a quarter turn.
  11. After several more minutes, carefully flip the entire quesadilla over.
  12. Grill until somewhat browned and crispy with a hot, bubbly filling.
  13. Slide onto cutting board and allow to cool for a minute or two before slicing.
  14. Serve with a scoop of ice-cream.
  15. Serves 2-4

Saturday was the most gorgeous day of the summer.

Everyone said so.

The bride was absolutely gorgeous. The groom looked delerious with joy.

We didn’t look a day over forty-five and our moves on the dance floor were the envy of the less limber bridesmaids.

will be back in a few days….

I’m taking a few days away from the internet in order to write and practice new fiddle songs and maybe–maybe!!!–sit on the dock with my morning coffee or afternoon iced tea or evening glass of wine.

I’ll return this weekend with wedding photos—my French Friend Janou’s daughter is going to be married on Saturday, which means lot of celebrating and merriment on the lake this weekend!

On Sunday I meet My Montana Friend Kathy’s new grandchild, who is only a few weeks old.   And then there is band practice, a highlight every week.

Sunday is also the three hour finale of The Bachelorette and I have no television.  I’m hoping one of my friends will be going out that night and will let me sit in his/her empty living room and watch the show, which will be corny and dramatic and filled with commercials but I wouldn’t want to miss.

Otherwise I’ll stay home and write, which isn’t a bad idea either.

apricot cake and a good work day

I loved today.  I think this was the first time in months I felt completely calm.  The writing went well.  The story is coming together.  It will be a challenge to finish it by the end of August, but it no longer seems like the Impossible Dream.

The sunset is spectacular and the batteries in my camera are dead.  So I’m sorry I can’t share it with you.  My friend Ruth (of sewing machines and animal rescue in RI) called me last weekend to remind me to watch for the Northern Lights, but Saturday was overcast.  Maybe tonight there will be something, as the sky is a brilliant shade of neon tangerine and layers of pink and blue.

Tonight I baked cakes, using a new recipe from a blog I found while googling gluten-free coffee cakes and apricots.   Check it out here for the recipe, which involves chopped fresh apricots and strawberries, along with ground almonds and raw sugar.  I’ve no clue what it will taste like, but the batter was delicious and so is the smell coming from the oven.

Yesterday Dancing Mandolin Player and I went to see “Savages”, my brother’s movie.  He warned me about the violence; I promised to close my eyes during the gruesome scenes, and I did.  Since I have nothing in common with drug dealers or gorgeous wealthy Californians, it was easy to stay one-step removed from the crazy tension and I really enjoyed the strange characters and the action.  DMP and I debated the ending(s) and the characters’ motivations over wine and plates of coconut shrimp at Trinity.

An excellent evening.  Of course, no trip to town would be complete without a stop for groceries so we bought more canning supplies before hauling our tired selves home.

DMP would like you all to know that she won the Grand Prize at a local fundraiser (attended by hundreds) Saturday night, so she now has her very own, very cool bicycle.

 You go, girlfriend!!!

i owe you

How is playing the banjo a lot like throwing a javelin blindfolded?

You don’t have to be very good to get people’s attention.

How is playing the banjo like peeing in a dark suit?

It gives you a warm feeling, but no one else notices and no one really cares.

How many banjo players does it take to change a light bulb?

Only one, but all the others gathered around will complain that that’s not the way Earl Scruggs would have done it.

war stinks

I went to Walmart (really, do I ever go anywhere else???) Thursday.  It was about 127 degrees in that parking lot, which was 18 miles long.  And it was approximately 149 degrees in the Garden Center, which made hauling dirty plants around really fun.

I spent $22.38 on new cherry tomato plants.

And if the deer eat these, I will be bankrupt.  And Banjo Man will cry.

But……I have a new weapon in my arsenal in the War Against Skinny Over-populated Protected Deer:

My daughter told me her father-in-law swears by it.  Wish me luck.

Now I know why Banjo Man has never been attacked by wild animals.

MorePie Weather Report:
We’ve had 10 days of summer sunshine.  Which means it has been hot.  And uncharacteristically humid, too.  I actually turned on the a/c, after having been schlepping across the Walmart Sahara Parking Lot and all.  Between canning and cooking and cleaning and blistered boobs, it was time to wimp out and cool down.

Which could be a bumper sticker.

blistered boob

No, I am not describing anyone in particular.

I’m talking literally here, folks.   This is a public service announcement for you readers out there who, like me, may have uncontrollable urges to make jam.

How do blistered boobs and jam go together?????  Huh????

Let me explain:  on the first beautiful day here at the lake, I put on my bathing suit and lounged around on the dock.  I ended up with a Cleavage Sunburn.  You know what I mean.  It was not a terrible sunburn.  It barely hurt.  There was no wincing involved.  I put aloe vera gel on it, wore #30 sunscreen and crew-neck t-shirts for a few days.

No biggie.

Where I got into trouble was in line at Walmart.  The Better Homes & Garden “Canning” magazine was sitting there with all its glorious photos of pretty canned fruit and vegetables and I became mesmerized by the sight of peach jalapeno jam.  I didn’t buy the magazine (how could a magazine cost ten dollars?????), but I came home and googled a recipe for it.  You know, because I’d bought two cases of peaches from the Peach Man.

Warning:  if you have had a Cleavage Sunburn (or any kind of sunburn from the waist up) DO NOT stand over a hot stove and cook peaches and jalapenos (especially while wearing a low cut sun dress).  Jalapeno steam will hurt you.

 Take my word for it.

p.s. this is a chicken, not me lounging on the dock.
